Filippos tassopoulos

Master of Sushi Artistry

Born in 1994 in Nea Makri, a seaside town near Athens, Filippos grew up with the salt of the Aegean in the air and weekends often spent fishing with friends. The sea was more than a backdrop to his childhood; it was a source of inspiration that nurtured his love for fresh ingredients and his deep respect for nature’s flavors. Greece taught him to cherish the light, the salt, and the freshness of the sea. From these early experiences grew his conviction that fish should be served in a way that honors nature — pure, simple, and elevated.

His artistic side first flourished through music, leading him to study music production and sound engineering. At the age of 20, another passion called him: cooking. Moving to the Netherlands, he began working in a Greek restaurant in Utrecht, where fate introduced him to a Japanese Sushi Chef. That meeting changed his life, opening the door to the precision, discipline, and artistry of Sushi-making. Guided by his appreciation for fresh fish and premium produce, Filippos mastered his craft, advancing from a takeaway Sushi bar to some of the Netherlands’ most prestigious restaurants, including The Harbour Club and Café in the City. His unique style blends Japanese techniques with Mediterranean sensibilities, creating Sushi that is both refined and soulful.

Soon, Filippos’ talent moved beyond restaurant kitchens. He began hosting Sushi workshops for all ages, from children’s parties to masterclasses for seasoned chefs, and catering private dinners, weddings, and large-scale corporate events. His consulting work has shaped menus for restaurants in both the Netherlands and Greece.

In 2025, Filippos expanded his creative journey beyond the kitchen with the launch of his first clothing line, Flip’N’Roll Clothing, inspired by the culture and artistry of sushi. With plans for a food truck, creative food–music collaborations, and new culinary projects on the horizon, Filippos continues to roll out fresh ideas with the same dedication to excellence that has defined his journey.
